Easy Buffalo Chicken Salad

In an attempt to eat slightly healthier, I have been trying to eat a salad for lunch most days. My absolute favorite salad is a Steak Salad but we don’t always have steak on hand. Since I need some protein or I will get very hangry by about 3:00, I have started adding some buffalo chicken strips to my salad. It adds enough flavor to make me happy and I can keep them stocked in our freezer at all times. If you wanted to make it healthier, you could use grilled chicken with some hot sauce instead of breaded chicken strips. I do it this way for convenience.

I listed what I typically will add to the salad below but you could add anything you wanted or had in the pantry. I try to keep most of the ingredients prepped and ready to go in the fridge because if it takes too long to make my lunch, then the kids will be done with theirs and yelling for something. I keep lettuce washed and ready to go in our salad spinner and tomatoes cut up in a glass Pyrex container.

Buffalo Chicken Salad

  • Salad Greens (I usually use Romaine lettuce but you can use whatever you prefer)
  • 1 Buffalo Chicken Strip (you can use any brand chicken strip or boneless wings)
  • Shredded Cheese
  • Tomatoes
  • Hard Boiled Egg
  • Crispy Onions or Red Onion if I have some sliced up
  • Ranch Dressing
